Blue Bottle Coffee’s central kitchen staff work from two locations—Tokyo and Kyoto—producing and preparing baked goods and other food items, then delivering them to all stores. This is a unique role where you can witness the moment Blue Bottle’s delicious food comes to life. In addition to seasonal menu updates and recipe revisions, you can take part in every step of the process as a team, including production, sorting, and shipping. In an environment where your desire to grow will also expand the range of work you’re entrusted with and your food production skills, you’ll be able to develop along with the team.
The hiring location is the Kyoto kitchen.
Key responsibilities:
– Prepare and cook baked goods and other items according to recipes (cookies and pound cakes using seasonal ingredients, as well as café food such as pies and soups)
– Take responsibility for safe, hygienic practices in line with established guidelines at all times
– Know and appropriately store ingredients used in menu items
– Place orders for ingredients and supplies, and manage inventory properly
– Oversee shipping tasks, including packaging and delivery checks to stores
– Interact with all team members with hospitality, and propose and implement actions that help the team work smoothly
– Work with team leaders to facilitate clear communication across departments
Through tasting sessions and quality checks, you’ll have opportunities to propose process improvements to create even better baked goods and café food—growing both individually and as a team. As part of Blue Bottle Coffee, you can also learn about coffee and how to extract it.

Required skills and experience:
– Experience in baking/pastry production or kitchen work in the foodservice industry
– Experience with store operations-related tasks such as ordering (preferred)

– Employment type: Full-time employee (6-month probation period)
– Annual salary: ¥2,800,000+ (preferred for experienced candidates / negotiable)
– Work location: Kyoto kitchen (373-3 Tamesu-cho, Higashi-iri, Dori Shomen-dori Tsuchidote-machi, Shimogyo-ku, Kyoto-shi, Kyoto)
– Working conditions: Variable work schedule each month; shift-based
